I made some pimento cheese a few days ago, which should last us for somewhere between two weeks and twenty years, lol.
I used this recipe, which I modified a bit: I doubled the cayenne, and I used dried onions instead of onion powder. Also, I mixed it by hand instead of using a mixer, because I prefer the texture when the shredded cheese stays as whole as possible.
It's highly yummy!
