This is such comfort food for me. I must have eaten this a million times growing up.
It's such an easy thing to throw together: I dice up some chicken breast and toss it in the crockpot with dried onions, cream of mushroom soup, half a cup of unsalted chicken stock, abundant parsley, salt, and pepper. Let that cook on low for three hours. Add in sliced baby portobellos. Let it cook for another half hour or so, just long enough that the mushrooms stay toothsome. Add cooked rice right before it's ready to serve, mix it well, and dish it up.
Yum!
I always serve this with crudités — a Shakes Manor classic.
